Durban Mutton Curry Recipe
This bold and aromatic curry is a South African classic, known for its deep spice profile and tender meat. Whether made with mutton or lamb, it’s a comforting dish that pairs beautifully with rice, roti, or fresh bread.
Ingredients
- 500g mutton or lamb (bite-size pieces)
- 100ml oil
- 1 bay leaf
- 3 small cinnamon sticks
- 1 tsp fennel seeds
- 1 large onion, chopped
- 1 sprig curry leaves or coriander
- 2 tsp ginger & garlic paste
- 2 tsp salt
- ¼ tsp turmeric
- 4 tbsp masala
- 6 even-sized potatoes
- 3 sprigs fresh coriander (chopped dhania)
- 1 medium tomato
- Water (if desired)
Instructions
- Heat oil in a pot and add onion, turmeric, and whole spices. Fry briefly until the onion softens.
- Add masala, ginger & garlic paste. Cook for a few seconds, stirring to avoid burning the spices.
- Add chopped tomato. When nearly cooked, stir in the meat and sauté until it begins to brown.
- Add curry leaves or coriander and salt.
- Add water if needed, then add potatoes.
- Bring to a boil, then reduce heat and simmer gently.
- Cook until meat is tender and potatoes are soft. Note: mutton takes longer than lamb to become tender.
